The First Meal in Roma
We landed in Roma early Saturday morning, after ditching our luggage the first place we headed was to Campo De Fiori, the daily local market. On a grim note this is the place where Giordono Bruno was burned at the stake in 1600 for being a heretic. To see what is fresh and what we can look forward to eating while we are here. The Italians are such seasonal eaters. The driver that picked us up from the airport told us about a restaurant in Campo de Fiori that has the "Ulitimo" Carbonara. The place Le Carbonara.
This being our first real meal of our Italy trip, we needed to go with a couple of Roman Classics. Jewish style artichokes, Bucatini Amatriciana and pasta Carbonara.
Spagetti like pasta with a hole in the center. A tomato based sauce made with onions and guanciale (Pork jowl bacon) fantastic with Pecorino Romano cheese

Carbonara
A roman classic made with guanciale (Pork jowl bacon) and egg yokes and pecorino and Parmesano reggiano cheese. The eggs are only cooked by mixing them with the hot pasta. Fantastic. A brilliant way to start the vacation.
